Amlou with wholegrain tahini · 350 g

Amlou is ground slowly, bound with honey and served to whoever walks through the door: hospitality turned into a spread. We keep its method and its spirit, and innovate from that base, with no shortcuts.

What it is

A spread rooted in the tradition of southern Morocco, from the Souss region, made with ground roasted almond and organic wholegrain tahini, argan oil and honey. The nut is roasted and ground until it releases its own oil; the argan gives it the toasted depth that sets it apart; the honey rounds it off. The result is a dense, glossy spread that spreads without effort.

How to eat it

By the spoonful on fresh bread or msemen, at breakfast and at tea time. It works just as well on toast, with crêpes or waffles, with yoghurt or fresh cheese, and as a filling in baking.

Storage

In a cool, dry place away from direct light. No refrigeration needed. Natural oil separation on the surface is normal and is not a defect: stir with a clean, dry spoon before each use.
