Amlou is ground slowly, bound with honey and served to whoever walks through the door: hospitality turned into a spread. We have brought it across exactly as it is, with no shortcuts.

What it is

A traditional spread from southern Morocco, from the Souss region, made with ground roasted almond, argan oil and honey. The nut is roasted and ground until it releases its own oil; the argan gives it the toasted depth that sets it apart; the honey rounds it off. The result is a dense, glossy spread that spreads without effort.

How to eat it

By the spoonful on fresh bread or msemen, at breakfast and at tea time. It works just as well on toast, with crêpes or waffles, with yoghurt or fresh cheese, and as a filling in baking.

350 g glass jar.

Storage

In a cool, dry place away from direct light. No refrigeration needed. Natural oil separation on the surface is normal and is not a defect: stir with a clean, dry spoon before each use.
